Yesterday, I made a super-quick, protein-rich, cheap soup – serves two. I forgot to take pics, but I will endeavour to get back on it with taking pics when I’m sharing recipes for you!
1 400g can black beans
1 medium sized onion, chopped
1 clove garlic
1 400g can’s worth of chicken stock (1 stock cube with the boiling water to top of can)
Basil leaves, torn. 1 dessert spoon natural yoghurt. Salt and pepper to season.
Sweat the onion and garlic over a medium heat.
Add the beans and stock, bring to the boil, then simmer for 15 minutes.
Whizz with a blender.
In a bowl, and garnish with dollops of natural yoghurt and pieces of torn basil. Season with salt and pepper and enjoy!
This can be heated up by adding chilli to your taste at the same time as the beans and stock. And I would highly recommend a crunch green salad to accompany!
